I absolutely love peanut butter… I mean who doesn’t? And I’ve really had a craving for a good chewy cookie, and what’s better than peanut butter to make things chewy? 🙂
These peanut butter oat cookies are to die for, they are seriously chewy on the inside and almost a little moist. Perfect with your morning coffee and so healthy you could probably eat them for breakfast. They contain no refined sugar, are gluten free and there’s a vegan option too.
I’ve had quite a hectic week in terms of getting all my studying done and assignments etc… So it was really lovely to just take some time and do what I love doing the most…bake and eat cookies :). Although most of the time my family seems to get to the cookies before I even get a chance. I suppose that’s always a good sign that I’m doing something right.
If you are strictly vegan, then just swop out the egg for a flax egg, which is a mixture of 1 tablespoon ground flax seeds with 3 tablespoons water, leave the mixture in the fridge for about 10 minutes and there you go.
