Oatmeal Choc Chip Cookies – A healthier but delicious snack. So incredibly easy to make and will win the hearts of everyone that tastes them.
Winter is really getting to me guys! It has made me lazy and pretty much craving everything sweet and delicious! I think I am just not built for winter. No matter how many layers of clothing I put on, or how many heaters are on full power, I am still absolutely freezing! I have resorted to living on hot chocolate because right now that is the only thing warming me up. And you know what goes great with hot chocolate (I am addicted to THIS STUFF) ? Oatmeal Choc Chip Cookies ;).
I love oat cookies! They are pretty healthy, they are easy to make and most of all the oats makes them deliciously chewing. Which is really all I ever want from a cookie. These babies right here are the shizz nizz. They only took me about 5min to whip up and they taste heavenly. They are the perfect mid afternoon chewy coffee snack.
You could make these one of two ways. The healthy way, which involves using a gluten free flour of some kind, I like using oat flour, some coconut sugar and lastly flax eggs (the minimalist baker has a great post about these). This way they are refined sugar free, gluten free and vegan. BUT… still yummy! The second way is to make them the good old fashioned way, by using regular flour, brown sugar and normal eggs. Either way, they are still chewy and delicious. I promise ;).
