Moist Carrot Cake Cupcakes – Delicious, easy to make carrot cupcakes that are super moist and fluffy and topped with cream cheese frosting.
I love this time of year. You can really feel the seasons changing. The days are getting a little colder and the leaves are falling from the trees. I absoloutely LOVE it. I’m not a big winter fan, I much rather prefer days around the pool, sipping smoothies and feasting on fruit. But… Autumn is simply beautiful. Everywhere you look it is golden. The leaves are all changing colour and the air is crisp. Autumn always makes me feel like a child again, it has that Easter feeling. As children, my sister and I would wake up early on Easter morning, put on our coats and head outside into the crisp air. We would spend hours looking for Easter eggs that our parents had spent the whole evening hiding up in the trees or in between flower pots. Every year it was so incredibly exciting.
One of my favourite things around this time of year is carrot cake, or carrot everything really. I absoloutely love having a batch of my favourite Healthy Cinnamon Carrot Cookies in the house or drinking that delicious, cosy Carrot Cake Smoothie (YUM!). This year I am making an all time classic for Easter…A Classic Carrot Cake (stay tuned for this), and this simply delicious Moist Carrot Cake Cupcakes. They are based on my ultimate favourite Carrot Cake recipe, they are actually pretty much mini Carrot Cakes. They are fresh, moist, super fluffy and simply scrumptious. Top them with some creamy cream cheese frosting and you have pure perfection!!
These Moist Carrot Cake Cupcakes are always a hit around my house and they truly are easy to make, I simply chuck all the carrots into my food processor to grate them (it has a little grating attachment), but if you don’t have one of them, then just see the grating as your exercise for the day ;). Besides they have tons of carrots in them, that makes them pretty healthy doesn’t it? ;). I hope you guys enjoy them, and let me know how they turn out!
