Homemade Coriander Pesto – A delicious and refreshing pesto recipe that is easy to make and is a perfect alternative to basil pesto.
I’m always looking for new ways to spice up my meals, especially lunch because I am often just to busy and sometimes simply too lazy to make something exciting, delicious and healthy. So I try to make things like the Everyday Hummus recipes or a easy tzatziki. That way it can just sit in the fridge until I’ve made a boring old chicken breast or some roasted veggies that need some livening up.
The Homemade Coriander Pesto is my latest addition to my fridge, it gives any meal a really nice fresh taste without being overpowering like basil pesto can often be. I love mixing it in with some cream and throwing it over some penne, or even simply eating it on some delicious fresh bread with cold meats or cheese.
Coriander is also pretty cheap and you often find it in large bunches so it’s quite easy and cost effective to make. I’ve realised that majority of my recipes are like this, so yes, this is another one of those recipes where you chuck everything in the blender and whizz it up until it all comes together. Because honestly who has the time or patience to have it any other way?
The HomemadeCoriander Pesto is also one of my favourite DIY presents to make. I love putting it in a pretty jar, with a beautiful specialised homemade label and giving it to people as christmas gifts (especially to those people who you don’t know so well) or simply giving it to friends when you’re going over for a dinner party. It is way more personal and special than a bottle of wine or even a bunch of flowers. It just gives that personal touch.
