It was my birthday last week and unlike times before I decided to only have a small dinner with family and a tiny braai(bbq) with my closest friends, and it was all really lovely. It’s weird how you start to appreciate the smaller things in life as you get older (okay I know i’m not THAT old), you don’t need to have a gigantic party filled with people you’ve met once but added on facebook so you just invite them anyway just to fill the crowd or down 20 shots of tequila for it to really feel like it’s your birthday. Instead it’s way more special to spend the day with those closest to you, doing something low key.
With all that being said, the one thing I really struggle to do on my birthday, is stick to my healthy eating and workouts. Most of the time this doesn’t just count for the day of my birthday but rather the whole week surrounding my birthday. I end up pigging out on any kind of sweet thing and fatty foods. So this year, with a lot of determination, I decided to pre-empt all this and I made this absolutely scrumptious replacement for your classic choc-chip cookies.
They are made with gluten-free oat flour, dark chocolate chunks, and a mixture of xylitol and coconut sugar. In other words, as cookies go, they are pretty much guilt free and healthy and exactly what everyone needs on their birthday. I wouldn’t advise everyone to do what I did and eat the whole batch in one go and top it with crazy amounts of melted dark chocolate, but it truly does offer the satisfaction you may need when you are simply craving something sweet like a chocolate chip cookie. As you can see I got totally carried away…
I have to admit… my determination to stay healthy may have been slightly compromised… because I did eat ALL these cookies, but I may have also eaten a couple of waffles…. I know I know… I really did want to stay healthy… but it was my birthday and we are all weak sometimes :). But this coming week is back to being on track, my fabulous family got me a Fitbit for my birthday so I am determined to hit the gym hard and continue on my healthy baking journey.
