- Flour. For a regular loaf use all-purpose flour and for a gluten-free loaf use oat flour & cornstarch (cornflour). This is a perfect combination of gluten-free flours to make a moist, light loaf.
- Granulated sugar. For a touch of sweetness.
- Baking soda. To make the loaf light and fluffy in texture.
- Coconut oil. Keeps the loaf cake moist.
- Eggs. Room temperature is best.
- Vanilla extract. To enhance the taste of the loaf and add yummy vanilla flavor.
- Ground cinnamon. Gives the loaf lots of warm cinnamon flavor.
- Milk. Any milk will work - including dairy cow's milk alternatives if you want a dairy-free option such as oat milk or almond milk.

This is an easy loaf recipe to make which doesn't require a lot of preparation time or baking time. The best part is that the loaf batter is all made in just one bowl! Then, while the yummy loaf cake bakes, whip up the dreamy frosting and in no time you will have a delicious sweet treat to enjoy.
Step-By-Step Instructions:
STEP ONE
Preheat oven to 180ºC/350ºF and line a loaf tin with baking paper.
STEP TWO
In a large mixing bowl, whisk together the flour, sugar, salt, and baking soda.
STEP THREE
Add the vanilla extract, oil, milk, and eggs.
STEP FOUR
Using an electric mixer on medium speed, beat together until well combined.
STEP FIVE
Fold in the chopped apples and walnuts.
STEP SIX
Pour the batter into the prepared loaf tin and bake for 35 - 45 minutes, or until golden brown and cooked through. Allow it to cool completely before topping it with frosting.
CARAMEL & CREAM CHEESE FROSTING:
- Using an electric mixer, beat the cream cheese and butter together in a mixing bowl until smooth and creamy.
- Add the powdered sugar and mix until well combined.

- Make sure to follow the recipe precisely, usually, I'm not a stickler for baking rules but when it comes to gluten-free baking the slightest change can cause a change in the end product.
- Oats are naturally gluten-free, but sometimes they are processed in factories that use gluten, so make sure that the oat flour you buy states that it is gluten-free.
Storage Instructions
To Store Apple Loaf: You can enjoy this apple loaf cake for up to 3 days after baking if stored at room temperature. Store the bread in an airtight container to best retain its moisture. If you store the apple loaf in the fridge, it will last for up to a week.
To Freeze Apple Loaf: This apple loaf freezes well and can be stored in the freezer for up to 3 months. You can freeze it with or without the cream cheese frosting. To defrost it, remove the loaf from the freezer and allow the bread to reach room temperature before enjoying it.
