I spend so much of my time daydreaming lately. It must be the change of season, summer is creeping in slowly but surely here in beautiful Cape Town so I’m already dreaming about sunny days by the beach and adventures to go on during the warmer months. Okay back to reality! 😉 Other than daydreaming, I also whipped up this absolutely decadent Easy Vegan Peanut Butter Frosting! No, you don’t have to be vegan to eat this! It tastes darn delicious either way! It can go on cupcakes, use it to fill a cake, or even better make it and simply eat it just as is. Yes, I’ve done that! It’s sooo good!
It’s also only made up of 3 ingredients! Peanut butter, coconut cream and powdered sugar! If you want to get fancy, add a little vanilla essence or even some cocoa! Place the peanut butter and coconut cream in your mixer fitted with the whisk attachment, and give it a good ol whisk! Whisk until fluffy then add the powdered sugar a little at a time! Done!
