Lemon…Lemon…Lemon…mmmm I’m always dreaming about lemon. That deliciously sour beauty. I have ALWAYS been a Lemon Meringue addict, I love the sour zesty filling topped with that deliciously sweet meringue topping….mmmm YUM! But my lemony dreams don’t stop there, I pretty much want to make everything lemony, so stay tuned for all things lemon. I’m thinking lemon cake, lemon bars and obviously this delicious Easy Homemade Lemon Curd. Because what could be more lemony than a Lemon Curd right?
To be honest, I’m not even totally sure what your supposed to use Lemon Curd for, all I know is that this stuff right here is so good that I pretty much ate it straight out of the jar. But if your not as lemon crazy as me, it is still an absolutely perfect thing to have in your fridge because you can use it to “zest” up any boring dessert. Add it into a plain vanilla cake, or pop it into some tart shells… whatever you can imagine. What I love about this Easy Homemade Lemon Curd as opposed to a store bought lemon curd, is that you can control the “lemonyness” a.k.a the level of lemon intensity. And I like my lemon to be INTENSE. Besides, it is pretty darn easy to make leon curd…who would’ve thought? All you have to do is give the lemon zest and sugar a good rubbing (to ensure you get all the flavour out), then combine all the ingredients in a pot and cook it over medium heat, making sure you whisk it constantly (you don’t want scrambled eggs do you?). Then simply continue to cook the lemon curd until it thickens and when your done, pour it into some jars and allow it to cool and thicken some more. There you have it, lemony goodness in a jar!
