It’s been a little quiet over here at Baking-Ginger. I haven’t posted or baked or photographed in what feels like ages! My Instagram account is starting to feel like a graveyard and my blog a little silent. But it has been a much needed break from everything and everyone, and my travels have been absolutely amazing. I have been to Cape Town and Durban (which I will be showing a few photos of soon) and have had amazing meals, laughs and many glasses of wine with my family and friends from around the country.
So in the spirit of holidays, I have made my all time favourite holiday cookies. Namely these Delicious Chewy Choc-Chip & Pecan Cookies. Yes I know EVERYONE makes choc-chip cookies and they really aren’t anything special, but these guys right here taste like no other choc chip cookie you have had before. They are perfectly crunchy on the outside and absoloutely scrumptiously chewy on the inside. Just like they should be! I have had many choc-chip cookies in my life before, most crunchy and crumbly, a few chewy and a few almost that taste more like saw dust than anything else. And although many weren’t bad at all, I have always felt that people don’t seem to get the crunchy to chewy ratio correct. I mean come on people, it’s all about that chewy centre!!
These Delicious Chewy Choc-Chip & Pecan Cookies are pretty much perfect! They don’t look gorgeous or like works of art, but this simply choc-chip recipe will probably become your new holiday obsession. They take probably 10min to make, and they are so perfectly chewy in the middle, with a slight crunch on the outside and then the “nuttyness” from the pecans rounds the cookie off perfectly. I make these probably more often than I should, but they are always a winner with kids and adults and I would definitely advise that you make at least 3 batches, because they will be gobbled up in seconds.
