Summer is really coming at us quickly here in South Africa and some days are already unbearably hot!! There’s really nothing like some delicious ice-cream or a yummy fruity popsicle to cool you down, but nowadays everything is packed with so much sugar and all these unpronounceable ingredients.
I really love Summer… I love sitting outside drinking mojitos, catching a tan (okay I’m ginger I can’t tan), and of course the beach!!! I would spend the whole day in the sea or the pool if I could. In fact I am really looking forward to this summer, because I am FINALLY going to get my scuba diving certificate! I can’t wait. I’ve been wanting to do it for years, but there always seems to be something in the way, sometimes its time and other times it has simply been my own fear. It sounds and looks amazing, but to be honest I am a tiny bit afraid… So if anyone has any thoughts or advice… Please throw all of it at me! 🙂
Moving on the more important things… These Coconut Berry Popsicles are amazing!! Coconut water is the latest and greatest when it comes to health. This stuff seems to be some kind of miracle water. It is perfect for summer because it is extremely hydrating and can aid in boosting your electrolytes, it helps with weight loss (it barely has any calories), and it is packed with antioxidants and nutrients.
These are also the easiest popsicles on the planet, because all you do is full the mould with some fruit (any fruit is good fruit), then top it with some coconut water. And there you have it folks. The most refreshing, healthiest, guilt free summer treat. I used Vita Coco, which you can get right over…here and then I simply used some chopped up strawberries and a few blueberries.
These beautiful Coconut Berry Popsicles are a perfect treat for the kids without it sending them on a sugar rush, and if you want to make an adult version simply add a tiny little bit of rum ;). Plus… Don’t they just look so beautiful and summery?
