One of my favourite things to make is Chocolate Ganache. It is perfect as a filling in pretty much any cake, you can use it as a tart filling or even simply to dip some strawberries in. It sounds pretty fancy, but really it is one of the simplest things to make.
There are two ways of making Chocolate Ganache. The first way is the slightly longer but safer way (not usually my top choice, I like to live on the edge). This way involves placing the chocolate and cream in a bowl over a pot of simmering water. The second way, the way I always do it, is to simply chuck everything in a bowl and microwave it. The only risk with this method is that it can burn easily and therefore it is VERY important that you take the mixture out of the microwave every 30 seconds to stir it.
I made a dark chocolate ganache for this batch, so I used 450g of dark chocolate with 250ml whipping cream. But if you prefer using milk chocolate then make sure to reduce the amount of cream you use.
