Chewy Chocolate Caramel Bars – Pure decadence in a bar.
Choc-chip cookies are everyones favourite, well at-least everyone I know. Who can resist the delicious classic chewy cookie? Well I got a little carried away this time and made an even chewier, even more delicious, caramel dripping cookie bar…. These Chewy Chocolate Caramel Bars are insane!! They have the same chewy texture as a usual chocolate chip cookie but with the added bonus of an gooey caramel centre oozing out of these amazing bars. I used my usual chocolate chip cookies recipe, leaving out the choc-chips, which is probably the most delicious recipe on the planet (yes i’m bragging). Then i simply flattened the dough into a pan, adding a layer of choc-chips, a layer of caramels and then topped it off with the remaining dough. Easy right?
These Chewy Chocolate Caramel Bars are ALWAYS a winner. I once made a batch of these for my boyfriend to take to work, thinking they would last at least a week, but they were polished off in under an hour. Yes ladies and gents they are THAT scrumptiously delicious.
I have been absolutely crazy busy lately with all kinds of projects, planning a holiday and trying to get all my work done before heading off for the holidays. I really hate having unfinished things when I go on holiday because I believe when your off, you should truly be off and give yourself that. I despise having to juggle holiday and work, I never feel as if I’ve rested then. So I am trying my best to get everything done in time for the holidays. So I don’t have much time to spend baking weekend goodies, thats why I LOVE these bars. The best part about these Chewy Chocolate Caramel Bars are that they are insanely easy and quick to make, which is always what one wants. Whose got time to slave away in the kitchen? They are perfect for a Saturday baking session and the whole family will have them devoured in seconds.
To start these mind blowing Chewy Chocolate Caramel Bars all you do is cream the together the eggs, butter and sugars (I say sugars because you use both brown and white sugar) using the paddle attachment, I used my Kitchen Aid because well it is literally my partner in crime. Once the mixture starts turning lighter in colour and becoming a little fluffy, add the remaining ingredients for the dough and continue to mix until all the ingredients are well incorporated. Stop your mixer every now and then to scrape clean the sides of the bowl. Then place 3/4 of the batter into a lined pan/baking sheet, pressing the batter flat into the pan. Then sprinkle on the choc-chips. In a separate bowl, melt the caramels in the microwave making sure that you stir often(they tend to burn quickly). When the caramels are melted, pour the caramel mixture over the choc-chips. Then using the palm of your hands, flatten pieces of the remaining dough and place it on top of the caramel layer until the whole pan is covered (it is okay if there are pieces that aren’t covered it makes it even more oozy and delicious). Place the pan in oven and bake at 180ºC/350ºF for 20-25min or until golden brown. Allow to cool and cut in bars. Then sit back and watch how everyone turns into little cookie monsters as they devour the Chewy Chocolate Caramel Bars.
