This week seems to be covered in blueberries, after making and… devouring those Vanilla Blueberry Chia Puddings my craving for blueberries seemed to increase. So what better way to satisfy them other than with some delicious Blueberry Muffins.
Yesterday I went to this lovely contemporary handmade fair in the city, so I spent the day gorging down on some absolutely delicious food from chocolate dipped churros to mediterranean tapas. The rest of time was spent browsing through all the beautiful stalls consisting of gorgeous handmade products. I tried my best not to blow all my money even though it was extremely tempting, so I ended up buying a few small things like these lovely little handmade bowls and some delicious chocolate spread, which is vegan and sugar free…which is always a bonus.
So today, I decided to have a slow day. Catch up on some work, maybe watch a movie in bed… and bake some blueberry muffins. While I must admit these muffins don’t look amazing, they are so soft and fluffy and they melt away as you bite into them. Which is how a muffin should be of course. That’s what I love about Blueberry Muffins, the way that they are all soft and fluffy, and then you hit a juicy blueberry and it just makes your day :).
These muffins can be made with a sugar free and vegan option, so they are pretty healthy and so much more delicious than any store bought Blueberry Muffin.
